Is non gluten-free food ok when served to gluten-free person?

    Gluten free, for most people is a fad. The only people who truly cannot have gluten are people with celiac disease. If the person has celiac disease, they will likely wind up with severe stomach pain. It's not fatal.

Most people don't fake allergies because they're trendy. Lots of people are allergic to gluten but if their allergies are severe, they wouldn't eat anything unless they are certain that it contains no gluten. It would be expecting too much for someone to prepare a gluten free meal for a co=worker. It's not your responsibility to customize your cooking for one person. If you specifically said it was gluten free and it wasn't, that would have been a mistake. In that case, the person could have trusted that what you were saying was accurate and determined to eat it based on that.
