    I had the good fortune to have a wonderful conversation with a farmer in Northern Uganda a couple of years ago.  One of the crops that he grew was cassava.  It seemed an ideal starchy vegetable for him because he could dig up just what was needed for eating or selling without disturbing the entire plant.  This allows for the plant to recover and regrow its tubers and it negated the need to store the tubers.  As far as taste is concerned - when we stayed at a safari lodge cassava was served as a side with our dinner one night.  It is akin to a cross between gummy mashed potatoes and wallpaper paste.  It was intended to be eaten with curry-like dishes and/or nut sauce (made from peanuts - delicious).
