    Anyone who likes cooking probably has come around this question sometime but answers are still been built scientifically. So far the health and medical communities remain divided.   Since I bought my first coconut cooking fat I have been reading and listening all sides. Each oil business has its own side of the story, it varies greatly. And since I can’t wait for them to make up their mind, I use moderation. Both oils are full of goodies.   The struggle point among olive oil and coconut oil is when cooking at high temperatures: Some say as coconut oil is high in saturated fat (primarily lauric acid), it doesn’t oxidize easily, been called heat-stable and perfectly safe to cook with as its smoke point (temperature at which a cooking fat or oil begins to break down) is around 230°C.   Some say olive oil, mainly monounsaturated fatty acids (MUFAs), even if having a lower smoking point of around 200°C, it is safe as ideal frying temperatures vary around from 175 to 190°C. And the discussion goes on.   My advice to you is to diversify. For example, in my kitchen you’ll find coconut oil, olive oil, ghee and… butter(!)   In salads, room or cold temperature foods, I don’t hesitate: Olive oil (specially high quality/low acidity)   If I’m sautéing something that won’t take much time: Olive oil   Stove top in general, if not frying: Coconut/Olive oil or Ghee   Oven: Coconut oil   I use butter for some recipes because I get bored with radicalisms :) and it has a delicious value.   I have no experience in frying but hey, if you rarely fry, when you do it your body will forgive you.
