    "Better opportunity." I.E. A job that you had a better opportunity ending the day alive at.

The problem with "better opportunity" is that the employer will then immediately look at your next job to see what that opportunity was. It can also be bad if it makes you look like you job hop because the grass is always greener. If you are no longer in social work or have moved into a different area of it that no longer exposes you to those dangers, you can say "left the field". You can also state "not happy". If you can include a cover letter that touches on it, with FAR LESS detail than you've given here, do so. It would be more of "I left my position with XYZ after a dangerous situation with one of my cases. I am now..."

you can say disagreement about policies or seeking better job.

You can't say better opportunity if you didn't already have a job lined up. I would just put "safety reasons" & then explain at the interview.
