What does pay number mean on a UK payslip?

The pay number will be the identifier the company uses so quote it. They are very unlikely to provide a replacement P60 and do not have a duty to do so. What they can provide is a "statement of earnings and tax deducted" - and that has the same figures and is accepted by HMRC.
