It is Happy Thanksgiving. We only use Merry for Christmas..... Merry Thanksgiving just sounds weird.

Generally it's happy Thanksgiving, some people say "happy & heathy Thanksgiving" or whatever; but merry Thanksgiving or any other well wish would not really be wrong. Personally I tend to say "have a good one."

I usually don't use it as a greeting type thing such as with "Merry Christmas" instead when I leaving some one that I won't see until after Thanksgivving I say "HAve a Good Thanksgiving" When I see family on Thanksgiving I usually just greet them "Great to see you" and don't mention the day.
