Well, if you're looking for the most realistic simulator, the best is Flight Simulator X for PC. With dozens of planes and helicopters to fly, pardon the pun, but, the sky's the limit. Also, you can download more planes/helicopters online. Trust me, although there isn't stuff like shooting stuff, this is one game you should try. However, if you do like blowing stuff up, maybe try Combat Flight Simulator 2004. Although I haven't played it, I've heard it was good.
