If she's using her UK's number, the you need to dial her number as you usually do. Resolving the path and re-directing the call to India, is the job of the switching node called the MSC. so call her like you'll call any other mobile in UK. Incase you're not able to reach her on her UK number by simply dialing, ask your operator (o2) if there is international roaming on her phone, if not, get it activated.
