    I think Paul Smiths college in Saranc Lake NY would be good. There is a Cordon Bleu cooking school in Ottawa if that helps. They have brochures and info on their website. http://www.lcbottawa.com/ I have a friend who is a chef. It is a field where you really have to pay your dues (work hard for crappy or no wages until you earn your respect). He now owns his own restaurant. I am sure a pastry chef is a little different.
