I dream of moving to Europe, also, particularly Spain. But if you don't know, the pay is way lower than the US, and the cost of living is higher. I'm not answering what you were wanting, but just so you know. I was bummed when I found out.

I've never been to France but Spain is amazing. I don't blame you. I don't know myself, but your best bet is to look at an expatriate forum, those are great. Does anyone know a good expat forum? Thanks if you do. Also, www.transitionsabroad.com may have some good resources. Good luck!!
