  I personally work in the industry. From someone in the field just start working. A true chef will prefer someone without training, and bad habits. you can work hard and they will teach you. just take in everything you can. Also you can make about the same rate of pay without a degree in most restaurants. and not have 80 K in student loans hanging over your head. Yet if school is for you, the only school worth a damn is the culinary institute of america. (CIA) the best Chefs come from here. http://www.ciachef.edu/ johnson wales and le cordon blu are good schools, But their reputation in the field is not so good. it's a hard job try cooking in a restaruant before you spend years in school for something you do not want to do. it happens all the time form those 2 schools.
