    High-end hotels, clubs, etc, only consider grads of culinary schools. Supermarket bakery clerks might pipe Happy Birthday on a cake, but rarely do any real baking, especially fancy pastries. That's why they're lucky if they can even get $10/hr. If you want a good career, go to Culinary Institute of America, Cordon Bleu in France, etc. Only go to the top schools - if you can get in.
