New to selling on ebay and buyer wants to pay in 11 days... Help!?

Regardless of what you might say in your listing about payment time, eBay doesn't allow you to file an 'unpaid item claim' sooner than 4 days after the listing closed, so there's no real way to enforce 'payment within 24 hours' - saying that just suggests that you don't really understand how eBay works. If you don't file/win an 'unpaid item' claim, you can't get a refund of your eBay 'final value' fees, so overall it may be cheaper to wait for them to pay. Remember, these are tough economic times, and they may have thought they were ok when they bid, but then things changed. It's hard to tell what's going to happen with a buyer who has 0 feedback, but here's our experience. We've been selling on eBay for several years now (over 1,000 sales), and we're considered a top-rated power seller. We have found flexibility to be a superior business approach. Over that period, making allowances has proved to be a good practice for us - we've had several buyers who asked for extra time to pay, and we've only had one buyer who didn't follow through - the rest were exceedingly grateful and left terrific feedback for us. My recommendation would be to wait and give them a chance - it's good business and excellent karma - and you have up to 45 days to file a claim against them if they don't pony up. If you absolutely CAN'T wait, file against them after 4 days, but ask yourself if you wouldn't be more comfortable in a different business model in the long run. Good luck!
