What's a good contrast ratio for LCD monitors and TVs???

I'm looking to buy, and I see them with 700:1, 600:1, and some with 2000:1. Which is better, and what do they mean exactly?

Obviously, 2000:1 is the best on that list. Basically, a contrast ratio describes the difference from the brightest white to the darkest black. Anything above 1000:1 usually is a safe bet for large monitors.
