    It would be better to get the owner to go to the DMV and request a copy of the original title. Selling a car without a title is just lazy, because its not that hard to obtain a duplicate. But, otherwise you will need a notorized bill of sale in order to prove transfer of ownership with the name and address of both parties, purchase price and date, as well as both of your signatures and a stamp and signature from the notary public. Also, if you go this route its going to get very complicated, because you will be placing a lien against the vehicle in order to obtain the title, which is going to cost extra and be time consuming (30 to 90 days).
