Answer:
Can you please be more specific? There are a lot of Italian operas and there are a lot Australian female opera singers as well. Joan Sutherland is one of the most famous sopranos from Down Under. Another famous Australian female opera singer is Nellie Melba. Speaking of Joan, I wouldn't call her fat as in obese, but she is kinda big-boned. And like Buttercup said above, she is a dramatic coloratura soprano. Even she has sung NUMEROUS Italian operas. It's impossible to give a decent answer if you don't provide any additional details. I know this opera "The Magic Flute" by Mozart which has two coloratura arias sung by the Queen of the Night character, "O Zittre Nicht" and "Der Holle Rache", famous for the amount of high F's in there. Joan Sutherland has sung this role numerous times. But it's not Italian. It's German. And as for Italian high operas, well like I said, there are MANY of them.

Are you talking about Joan Sutherland? She was a coloratura soprano, with a very high range at the top, so she sang lots of roles using those exceptional notes. Lucia di Lammermoor might be one of her most famous roles, especially the mad scene. And lay off the "fat". SIngers often carry a bit of weight, but a lot of it is the way your body changes shape with training. Singing is a highly athletic activity and, like with any other, the muscles used get overworked and bigger. The abdominal muscles thicken and look like a bit of a "tummy" Their job is to help support the pressure on the diaphragm. The diaphragm, the big sheet of muscle that separates your guts from your lungs, also thickens and develops as it gets stronger - so more midriff bulge and less waistline. The intercostal muscles - the ones between the ribs - get bigger and actually force the ribs further apart, so your rib cage sticks out further. I can hang my thumbs off my lower ribs. Makes for great support for the minimal superstructure! The back muscles expand - they are being given more work to do. And, the final joy - a serious double chin as the muscles surrounding the throat get looser. Either you want to retain your girlish figure or you want to sing. You can't have both! Frankly I never had much of figure and I would much rather sing. I am also Aussie, so perhaps committed to supporting our home grown performers, which doesn't alter any of the above.
