Why did my resurrection plant turned yellow?

I picked a few jalapeno peppers from my plant and after 6 days, one turned red - why?

    well, I suspect that particular one was riper than the others. If the others are ripe enough, they'll probably get at least a little red on them. Fruit often ripens off the vine or tree. Think of the bananas that you buy with green tips that turn fully yellow, then brown-yellow. They're ripening. Tomatoes will sometimes fully ripen to orange when they're picked green... actually, they will often ripen if they are at the "white-green" stage. If they're dark green, they generally don't. Many fruits will ripen to red (or their ripe color whatever that is) if you put them in a paper bag with an apple. The apple gives off ethylene gas (this is harmless!) that helps other fruit ripen. This is good to know if you want to eat that mango SOON and it's not ripe enough.
