How does the process of beaming down data from a satellite to a phone work?

Does the satellite have to pinpoint an exact destination to broadcast to? How does movement affect this? Does the information make any stops (at cell towers?) in between?

Mobile phones and satellite phones are not the same thing! Mobile phones communicate with terrestrial cell towers, has nothing to do with satellites at all. Think roaming between wifi APs in a building or university campus - pretty similar topology.
