Because it's a tradition. The first conquerors of America, Spanish soldiers offered native people turkey and Indians offered corn. By these offers, a deal was made between the two for peace, praying to god. that's why we have today thanksgiving day to remind us that event.

Because supposedly the Pilgrims ate turkey -- although the turkey they ate was the wild turkey the woods were full of 400 years ago, not the big-breast, mass-produced birds of today. Of course, no one really knows for sure if the Pilgrims really ate turkey or not.
