If you are in a "work at will" job in the US (not union or contracted), then in most cases your company can change the schedule at will, and without notice, unless they have a policy that prevents them from doing this (very unlikely). There are some states that have specific laws regarding the posting of schedules and timing, but they are the exception, not the rule.

Yes they can. Go talk to your HR department and to your boss. You were on FMLA and the law states they have to give you a job when you return to work from FMLA. The company can give you any job they see fit. Go on Google and look up FMLA. Your HR department should have given you a booklet on FMLA and the law before you left on maternity leave.
Most states in the US are "at will", which means they have the right to fire you or change hours etc. It appears the writing is on the wall and you should be looking into other forms of employment. With a new baby and with your hours changing from 1 week to the next can be challenging to find a babysitter for your new baby. Most daycare only has hours that are limited and with your schedule till 7 or 8pm could be a problem. They may have done this in hopes you leave and go elsewhere, since in many cases with a new baby could be off for doctor visits etc, that you would not have prior to the baby being born. Unless you are union or have a contract with them, they can do what they want. good luck
