Whats the difference between sales and orders?

Without seeing it in context it is difficult to answer. Generally orders become sales once they have been fulfilled. So an order might come in for 50 items but it wouldn't be counted as sales until they had been supplied. Just to confuse the issue for you big companies count sales value as the value of invoices issued. Little companies count sales value as the amount of money that has been received.
