December in Australia is SUMMER time and very hot.

Any part of Australia in X-mas season (including not X-mas season) is great to visit. If you want to visit during the time, you better hurry to book transportation tickets and hotel. Because Australia would be packed during the season.

Yes, get away from the cold it's summer over here during Christmas so instead of huge family feasts and staying in doors most people are out at the beach having barbecues. It's a great atmosphere. I would suggest the west coast (Perth) as it isn't as hot over there as the eastern states which can reach 40 degrees on Christmas.
