    Farriers and Equine Vets probably pay the best. Teaching will pay bare minimum, Training a little more, going into a horse industry such as racing or sport-horse breeding/training will pay more than working at a small local livery yard or a small time breeder. College/University will vary depending on what root you go down, look into agricultural colleges and see what courses they do. Be aware this a high competition route to go down, lots of people would love to work with expensive horses but there just aren't enough jobs to go around, so you'll have to work really really hard if you want to get anywhere in that industry. Edit:FYI, for jobs such as mounted police etc, that's not just frolicking around the streets on a horsey. You need at least 2/3 years as a regular beat cop, that's after the 12 months of police training and exams, and then apply for mounted branch which you may or may not get. You also need to be prepared to get a lot of abuse and deal with individuals in very close proximity that you usually would not go within a mile of! Strength (emotional and physical) as well as loud voice is a must, as well as handling very large horses often with a temper!

Mucking stalls. No education required. Pays very little.

When I first left school I worked at various thoroughbred studs as a stud groom and track rider. The pay is bad! It has got better since I did this work due to standardised regulations. The work is what you are expecting. The day is fun! The time spent at work is where you love to be - with the horses and not stuck in an office indoors. Yes - it is mucky but - Hey! so is all aspects of horse management. The other people you work with all enjoy the subject and aspects of work as much as you do so you don't bore them to death. And - in many work situations, you can board you own horse at the place you work so you get the best of both worlds - pleasure and work! I am now a Teacher in Special Education but the best times I had in employment was when I worked as a stud groom. The pay is poor but the job rewards are great!!
