What is your favorite recipe for Thanksgiving Turkey?

My absolute favorite turkey recipe is Alton Brown's brine method that I used for the first time last Thanksgiving. I came upon it at the last minute and could only brine the turkey for about 6 hours but WOW, what an amazing result! Everyone said that my turkey was the best tasting and most moist turkey they had ever eaten! I owe it all to Alton! If you google his recipe you will find it and the whole episode where he makes it is on youtube. Keep in mind, you need lots of vegetable stock and you will need a big 5 gallon bucket like you can buy in a hardware store. You will also need a couple of odd ingredients like crystallized ginger and allspice berries but you can find these in most supermarkets. Plan ahead. Alton uses this fierce turkey rack on his video that I searched for everywhere! I was finally able to come up with a similar one on amazon. The link is below. I have never done this myself and I know you need special equipment to do it, deep fry it, it it soooooo good, so juicy and tender...yum.

Get your turkey frozen. Buy one that has the thermometer in it. Let it thaw in your refrigerator (for each 5 pounds of turkey it has to thaw 24 hours), so if you get a 20 pound turkey it would thaw 4 days and nights in the refrigerator. Wash it in cool water rubbing it all over to make sure the pin feathers are out. Some are left in just pull them out and throw them away. In the neck area there should be a pouch of giblets. Take that out. In the inner cavity there may be the neck. Take it out. Make sure to take out the metal wire that hooks the feet together. After you are done washing the turkey (inside and out with cool running water. Lay it on your counter and pat it dry with paper towels. (You will have to wash down your counter top with a disinfectant after you get the turkey off it). I used the Reynolds Turkey bags for the size turkey I bought. Put 2 tablespoons of flour in the turkey bag and shake it up really well. It is to coat the bag. The directions are in the package. Dump the excess flour in the garbage can. Take a stick of real butter and cut it into very small pieces. Set aside. Get a bottle of Lea Perrine's Worcester sprinkle it generously over the turkey, rubbing it in all over. Place the turkey into the cooking bag. Then, place the pieces of butter all over the turkey. Close the bag with the special twist tie. Place the turkey in your roasting pan. Cut six small holes in the top of the bag as directed with your paring knife (to let off any steam from the turkey). I always put some water in the bottom of the roasting pan, to help keep the turkey moist. Place the turkey in the oven at the degree stated on the turkey bag box. Usually 325 to 350 degrees or 3 1/2 to 4 hours. Check the box, I am not positive on the temperature and time. When the thermometer pops up you will know your turkey is done. The turkey will be very moist and tender. Has a great flavor too. Oh one more thing... I never cook my stuffing in the turkey. I use Pepperidge Farm seasoned stuffing mix. Just follow the directions on the bag and you will have a great stuffing. Hope this helps!

2 eggs 1 1/2 cups libby pumpkin 3/4 cup sugar 1 tbls brown sugar 1 tbls molasses 1/2 tsp salt 1/2 tsp ginger 1 tsp cinnamon 1/4 tsp cloves 13 oz. evaporated milk 1 refrigerated pie crust put crust in pie pan and shape edges, mix all other ingredients together and pour into pie crust. Bake at 425 for 15 minutes, turn down to 350 and bake for 45 minutes. makes 1 pie

Buy a turkey sized Reynolds cooking bag, and follow the instructions on that. You just add some celery and onion to the bag while you cook it, and it comes out so moist and delicious.

First I would use a spiced brine so that you have a flavorful and moist turkey regardless of how you choose to prepare it. Second, if you can afford it, get a fresh turkey. Third if you have a smoker you can smoke your turkey. It turns out fantastic. Everyone raves the rest of the year about it. I've attached the recipes. Enjoy!
