    Perhaps the most difficult thing to do is take an audio source of polyphonic music with complex waveforms and overtones and convert that into a representation of music in real-time. SmartMusic (http://www.finalemusic.com) does alright with monophonic instruments; you could also look at Auralia Ear Training (http://www.sibelius.com) and EarMaster (http://www.earmaster.com). It is much simpler (and cheaper) to use a digital instrument with MIDI (or USB/MIDI) and send the digital key information to a computer/screen display. Each key has it's own address, and no audio needs to be converted. Going the other way 'round (which I think your first question was) is far simpler. Any number of notation programs have on-screen keyboard displays with a 3-D quality or the use of color dots to indicate which notes are depressed as the music plays. Getting sheet music into the computer is going to require a music-specific OCR program like PhotoScore (http://www.neuratron.com) SmartScore (http://www.musitek.com/) or SharpEye (http://www.visiv.co.uk/)
