I was a restaurant host for three years. Some skills you might want to portray 1. ability to stay calm and work well under pressure (if its a busy restaurant) 2. positive attitude towards customers and co-workers 3. good phone communication skills 4. organization 5. speak clearly Also try to learn about the restaurant beforehand, its menu, hours, clientele, etc and try to portray yourself as someone who would match in that setting.

Smile with every statement or answer and let the interviewer hear the smile in your voice. Ask intelligent questions, especially if you happen to be blonde. Talk about what the hours might be if you go to school or hold another job. Chances are part of your job will be the air traffic controller when trouble arises in shifting and moving diners and wait staff. But that will be the exception rather than the rule.
