    Considering that the restaurant you applied for is hiring a position may be taken quickly so you should turn in your cover letter and resume as soon as possible. Even if the manager isn't there for a week it would be put on his desk by the employee you handed it too. A few days the manager returns to the restaurant you should call him asking if he had a chance to look at your application, cover or resume yet which he will say yes or no. If hes interested in you he will want to interview you. Good luck.

take your resume now and be persistent and when the manage gets back tell the manager that you are a hard worker and very dependable and that your not leaving until your hired even if you have to sleep in the restaurant. They will get a laugh about it and also they will see how bad you want it.
