If youre working in the pastry department there are still differrent section. Production making all these pastry sauces,sponge cake and other things. There is also french cake section,petit fours, cake decorator, buffet. So there are people doing different type of responsibilities which is depend on youre section assigned. You can try one section at a time. Working in main kitchen is also good, theres hot and cold station. you can learn more about it also. Focussing in one thing is also good but when learning other section will be better
