In Nevada and AZ you have Lake Powell and Lake Havasu that offer boating, but they are crazy busy at spring break. Lake Tahoe in Cali has great mountain biking, but it is probably still snowed in until June. If you are looking for mountain biking in Socal, there are so many trails it would be hard to list.
