A practitioner is usually more qualified than an assistant, and so makes more money. I think practitioners need NVQ Level 3 and assistants need Level 2.

sounds like someone having fun with titles! i think the previous answer makes more sense: it is all down to level of qualification and amount of money paid! the practitioner is the professional and so gets paid more. assistant = dogsbody! does the work no-one else wants to for a fraction of the wages!
