My faves are Segovia, not far from where you'll be staying, and fairly easy to get to, by train, with possibly a train change in Madrid. And, of course, Madrid. And Sevilla (two and a half hours on the AVE....TOTALLY AMAZING to those of us who used to take 5 hours to make the trip, 8 by road.) The most captivating city in the country...and then Granada, too. But, you'll be spending time with family? I think, if you're not super partiers, you can skip Ibiza. There are tons of really great places to go that don't involve the expense of Ibiza. As exciting? Depends on your interests. You should be able to enjoy the partying in Barcelona, and enjoy it almost as much. Of course, there's tons more to do in and around Barcelona that don't involve that party scene. If you want nice, quieter, less busy beaches, explore the northern coast and Costa de la Luz on the southern Atlantic coast.

You should find all you want in Madrid, except the sea. As for cheap flights from Madrid. Look at http://www.ryanair.com/es

Don't waste the time and money to go to Ibiza. There are great beaches all over Spain. Alicante province has some great camping near cliffs along beaches with awesome swimming and sunbathing. Lots of bonfires, college age kids playing guitar at night but not clubby. For that you have to hit the beaches near Málaga but watch yourself, don't go nuts. For culture see Granada, Córdoba and Ronda for a southern excursion - you could do that in 5 days with trains, so beautiful. Or do Madrid, Segovia and Salamance - same time frame. Toledo is really lovely though, make sure you check out the cathedral at about 1:00 - the sun pours through a hole in the ceiling and hits the eucharist - it is quit a sight.

my favorite places were Madrid and Barcelona. If you go to Barcelona i recommend the Haromar hotel and you MUST go the the restaurant CASA BLANCA. It is only two blocks back from the Mediterranean Sea and it's delicious. I had the chicken. don't be surprised if you see a random naked person riding his bike in downtown Barcelona and Madrid is amazing. Hope this helps
