You need a visa unless you have an Italian parent. if you have an Italian parent that was an Italian citizen when you were born then you can get an Italian passport. If you have no Italian blood then you will have to get a working visa. Without this you can only stay in Italy for 3 months with the AUS passport. You cannot get legal work without a visa and if you find work 'under the table' then you will be paid next to nothing. Speaking basic Italian is not the problem, however if you want to work in a hotel you must be legal and normally you will be required to speak fluent Italian for this. There are other jobs that you do not need fluent Italian. The pay is not good and the cost of living is high. Don't mean to put you off! I am Australian and I have lived in Rome for 2 years.

Note that as an Austrailian, you will need to have a visa that allows you to work in Italy to take one of the jobs legally. It's much easier for someone from the EU.
