No they don't play it in the cathedral, despite the tourists this is still a church and not a cinema. However they play about it.

The action TAKES PLACE at the cathedral. They don't SHOW the movie in the cathedral. The latest (Disney) version is an animation. Various earlier versions were filmed at movie lots where the necessary parts of the cathedral were re-created, so the movie was not SHOT at the cathedral. 1923 and 1939 are the two best-know early versions. Googling the title will bring up a lot of pages with the stories and history of the various versions.
