I do not speak for Apple, however Linux can emulate a few of these games via third party software (Wine, Cedega, etc). To check what games would be compatible with Wine, please visit: http://appdb.winehq.org/ (as you can see, CS:Source is in the platinum list). Also, Wine is free, so have fun!

That really depends. Not all games have a Mac or Linux OS version. If there is one, most likely you have to BUY the mac or Linux version of the game. In cases where there is no mac or Linux version I would suggest using Wine. It will help you be able to run windows games in a mac or linux OS. But it does not work for all games. Here is a list of tested programs (includes games) for wine. http://appdb.winehq.org/ If any configurations are needed to wine to get it to run the game, it will be on the site.
