I enjoyed Rotorua (although Yellowstone is better overall) and Mount Tongariro (Mt. Doom in LOTR).  Yup, popular with tourists but fun anyway.  Some decent hikes around Mount Tongariro. Milford Sound, mentioned by is not on the North Island.
