    They're basically hydraulic. Their natural state is curled up, and if I recall correctly pressure is exerted on a fluid to make them extend. When they die, the pressure is no longer exerted and they curl up.

They don't have muscles to straighten out their legs, only to bend them. Their legs straighten like a long balloon full of air, but their legs are full of bug blood. When the animal dies it's heart stops and the pressure to straighten it's legs is gone. Then in death the muscles contract and bend their legs.
