  NCL is great for their Freestyle (do what you want, when and where you want and with whom) concept, which gives you the freedom to eat when and where you choose within the specific dining hours for dinner. That means that, if you are late returning from a shore excursion or free time ashore, that you don't miss out on dinner because your specified dinner time came and went while you were gone. But, in all honesty, NCL has let both their customer service and their ship maintenance slip a bit from what it used to be. I saw the Sun recently in Victoria BC, and there were noticeable rust spots on the hull and things looked more frayed and worn than usual. She hasn't had a dry or wet dock refurbishment in a while, which is when most of those issues are dealt with. These shouldn't affect your overall cruise experience TOO much, but are factors to be considered in your decision making.
