Agreed with Donald! What he's said is 100% on the dot. The prime reason I did not choose to take equine studies courses. You learn your craft from riding, working under trainers, learning about the industry and actually doing the work yourself. But if you would really like to go through the program, by all means, I'm not trying to be a downer. From what I heard, unless you are competing on a team, the actual riding done is very basic knowledge. The bookwork can be on the difficult side like go big mentioned. As far as specifics, it depends on the school. The best way to find out information is to call/email the colleges and program directors requesting information.

You should be able to get a good idea of the curriculum on the specific school's website, as many post what classes need to be taken. Equine Science at the University of Minnesota Crookston is a LOT of tough science. I think it looks incredibly difficult, and I'm a nursing student! Organic chemistry and advanced calculus? No thanks.
Go Big
To train dressage you have to know how to ride dressage. Equine programs are very good for a lot of things but not learning how to teach something you can't do well yourself. There are already too many "instructors" who learned from "teachers" how to "instruct". All of the real instructors that I know where successful at their discipline before ever starting to teach.

Well, I'm planning on going to Colorado State for their equine program, but I don't think it's specifically dressage, it's actually more western. I'll answer anyway though I guess because I know several people who are in the equine program. What school? Colorado State University Did they like it? Yes What were the classes like? Sounds like the professors are really good, and they get a lot of hands on experience. Did the program have alot of horses for the students? Yes Was it alot of inclass learning? Or was it alot of hands on learning and lots of riding and working with the horses? I think both to an extent, but it also depends which class. How often did you ride/work with horses? Also depends on the class, but to my knowledge you work with the horses most days in the equine classes.
