Bake! it's a lot healthier than frying it. I normally cut the skin a little and stuff/season the inside then put the skin back season the skin and let it marinate overnight. I then put it in the oven at about 4am at 275 degrees and raise the temp to 350 after 4 hours until its done. sometimes i use the oven bags (it cuts the cooking time in half) and when its done i take it out the bag and put it back in the oven just to get the crisp on it...AMAZING! both ways will come out so juicy!!

My grandmother uses oven bags. It doesn't make a fancy presentation or crispy skin, but it's always nice and moist.

Soak in salt and water over night. Stuff, and bake at 375 for a few hours... It's so tender and juicy salt water is the secret!
