Vietnamese Food: What is a good fish sauce ratio if you want to make nuoc cham for someone who is not familiar with the flavor?

  • Since I grew up with it, the flavor of fish sauce does not seem that strong to me. I know for others, it can be extremely pungent. I don't want to go without fish sauce in the recipe because I think it would change the flavor of the dipping sauce completely. What would be a good and safe amount to use if you want to make it for someone who has never had Vietnamese food before?

    Here's how I usually make mine which a lot of stay-at-home Vietnamese moms and Americans approve: _4 cloves of diced garlic. _3 tablespoons sugar. (use sugar generously) _Less than half a lime or 1 tablespoons of vinegar. (don't use lemon) _Diced chilli peppers. (depends on how spicy you want it to be) _Add 2 tablespoons of fish sauce and mix it before you add the water. _Add warm water (this is important because it gets rid quite a bit of the strong smell of garlic and fish sauce) _Now you can just adjust the fish sauce, lime/vinegar, and sugar ratio.

Another ingredient you may want to add is daikon, which I believe is like carrots. I have seen nuoc nam with it in the fish sauce.
