  What I do at my restaurant when things are going smoothly and everyone is busy doing what they're supposed to do, is walk around and greet the customers. I ask them how everything is and see if they need anything. After a while of doing that I make sure that everything is stocked and CLEAN! My motto is.. if it seems like there's nothing to do..there is always SOMETHING that needs cleaning! A restaurant can never be too clean! :D That way, when everyone else slows down they can pitch in and help.. and of course, when they see you doing all that work, they can never say "so-and-so never does anything!!". So basically, just offer assistance wherever it's needed, make sure the customers are satisfied and that the staff isn't just in the back goofing off ;)
