Almost. Only move Enterprise from the beginning to the very end. There are in-jokes and other things you won't quite get because it's based on the TV series history.

No ... do the original series first, then the movies for the original series. Then start watching The Next Generation Series, then TNG movies. Then Deep Space 9, then Voyager. Watch the Enterprise Series last. I almost didn't see it because you had it first. Yes, that's the correct order in terms of the Star Trek universe. But watching them series by series in the order that they were made will help you understand what you're watching better.
