This really depends upon the size of the shop. The shop I frequent the most has separate staff for the girls and guys soft goods, surfboards, wetsuits, and skateboards.

Well the surf shop I work at does have people that know **** all about surfboards, so they usually just refer the customer to me. Not very good for the business though... When customers walk into a surf shop, they expect the workers there to actually SURF, not just posers that want to help you out being a poser. So the answer is no, you don't need to know anything about surfboards, just don't expect your boss/co-workers/customers liking you.

Of course you do. If you work in a butcher shop, don't you have to know about meat? Could you sell cars if you don't know how to drive? People who come in that shop want advice and suggestions from surfers who know how to surf and know surf boards.
