If, for example, my website is about Elephant Safari's, I want to learn how to asses my chances of getting a good Google ranking when people search for Elephant Safari's? Are enough people looking for Elephant Safari's so that I can attract good volumes of traffic? Do many African Elephant Safari companies advertise on Google and do they pay well for clicks? Is there a process/blog/ebook to ehelp m answer the above questions?

The simplest way is to look up in Google Keyword Tool. Think of keywords which would describe your website main business (search queries which users would type if were looking for your website services) and then type these keywords in Google Keyword Tool. If you have search volume and also growing trend (Keyword Tool shows that), the business is in demand. Combine this with Google Trends as well - check what countries are looking for these keywords most of all. Sometimes it happens that search volume is false because is made by not Internet users but by companies selling this product or service instead.

Google trends will give u all details about your first query ( Coincidently Elephant Safari has a peak search interest rating of 100 today ). Check the following link http://rswpartners.com/google-trends/ As far as your second question goes i dont understand your concern. Just because your website is about elephant safaris , are the Elephant Safari Companies the only ones who would be interested to advertise. If i were an Airline or a travel apparel or a camera manufacture I'd still be interested to advertise on your website.
