Can I buy an Xbox 360 slim 4GB and just buy a 250GB hard drive off of ebay?

Yes, but since that's a knockoff and not a real one made by Microsoft. it doesn't act exactly like a real one. It's OK for simply storing game data, but it can't play any backwards compatible games. As with all unofficial accessories you risk it not working correctly or possibly getting bricked by Microsoft in any upcoming updates.

Of course you can. You just need to take out the 4gb harddrive and replace it with the 250gb harddrive and you now have a 250gb xbox.
