How would you find out the height of the roof of your house without measuring tape?

You could do it with trigonometry. 1. Measure out from the house wall out say 20 or 30 feet THEN add the distance from the outside wall to the highest point from somewhere inside the house. 2. Get a theodolite and measure the angle from that point to the roof top. 3. Calculate the height, using "side" "angle" "angle", which is the measurement of "1" above, 90, + the angle you found. You can make a makeshift "angle finder" (a protractor) with a piece of cardboard with the angles marked on it. You would be dealing with a right triangle that is say 5 feet off the ground, so you would add 5 feet to the answer.

Use a meter stick.

Try imagination guesstimation. You know your height. Imagine standing next to the house Place yourself standing from ground level and another you standing on top of your head and another until you reach the desired height. You'll get the approximate answer.
