Depending on what profession you are going to shadow...there might be certain laws, safety precautions that might not allow you to get the full extent of what the job entails, (which is where your brilliant questions come in) but by the end of the day...you should be able to answer whether or not this is type of career is for you?

Yes, that's exactly what it is. You follow a person with a certain occupation (preferably one with a job you'd be interested in) around for a day to see how you like the job. And yes, take some notes, maybe pictures. At the end you usually thank them and ask them some specific questions about their job (salary, what training you need, etc).
