  Check in with a couple of the recognized schools of hospitality management - Cornell University (Ithaca NY), I think it's the Statler School, but hit the main university website...or Roosevelt University at http://www.roosevelt.edu in Chicago. Talk to senior faculty at each school. Tell them your problem, and see what they'd recommend. Check Encyclopedia of Associations (library publication, in print or database e-form) for contact info of the National Restaurant Association or google it. They may be able to give suggestions or have a career center with phone advice or websites. Good luck. You also might be able to find a school like this - I'm also thinking Kendall College in Evanston (I think), Illinois - it's suburban Chicago, anyway - or there's a NY-based school of culinary arts that is extremely well-respected. Best wishes. You sound as if you're taking a pro-active role in your education. (and aren't too fond of UCLA at the moment.) I'm rooting for USC in next week's football game of the cross-town rivals (very big grin)
