What rice do they serve at Greek restaurants?

    I am a former chef and have eaten in many Greek restaurants here in Toronto Canada, they do cook it in a chicken broth, some even cook the pasta shaped like rice, orzo in with it, I had a friend who ran a taverna style place on Danforth Av, one with the whole lamb rotating in the front window, and he said that was all they used, some will ad a bit of turmeric (poor mans saffron) for a heighten flavour. As for the basmati or Jasmine rice the one person said, I know Greek chefs and Uncle Bens is all they use, just add a cube or 2 depending on your amount making, a pinch of pepper, no salt the chix stock is enough, even a bay leaf for flavour.

We call it rice pilaf. Below is a tried and true recipe that will not fail you. It serves 6-8 people easily. In a large pot melt one stick of butter and a couple of healthy handfuls of either orzo or fine egg noodles to cover the bottom of the pot and cook on medium high until lighly browned. Add two cups uncle bens long grain rice and one large can of College Inn Chicken Broth ( I forget how many ounces 46??) Do not stir. Over medium heat bring broth/rice mixture just to boiling and then cover and cook aprroximately 20 minutes until liquid is absorbed. Remove from heat and let sit a short bit. Be sure not to stir the rice while it is cooking.
