ever hear the expression breeds like bunnies ? well bunnies make allot of babys so they are symbols of fertility, spring is often associated with fertility because allot of animals have babies in this season, & trees are sprouting leaves, new plants are growing , etc.

When the Catholic church decided when Easter should be celebrated, they decided to use it to replace the pagan celebration of the Vernal Equinox. Because the pre-existing festival was all about the upcoming spring and fertile fields, it used lots of images related to fertility and life, mainly eggs and rabbits. Then the two celebrations got a little mixed up.
